Raer Whisky – 5000l and 2000L stills with complete brewery and malt handling system
Ryebeck supported a lowland Scottish distillery who are a craft distillery, a family business, and who put the local community at the heart of everything they do. When Jackton Estate was looking to setup their new Whisky distillery, they turned to Ryebeck for a turnkey solution. It needed to be end to end and highly automated. So, Ryebeck put together a sophisticated solution, and delivered a completed Whisky distillery from bulk malt handling, a fully functional brewery and two (5000L & 2000L) stills, along with all the required finishing and holding tanks.
The range of still sizes and the brewery mean that this operation is truly multi-faceted. From producing hand sanitiser during the pandemic, to providing the fist whisky to be put in Raer’s 2020 casks to even producing its own beer and gin – this operation is a true grain to glass operation.

Raer was looking to produce the highest quality, truly integrated grain-to-glass Whisky in Scotland. They turned to Ryebeck to deliver the entire operational solution from malt handling to final whisky production. Raer is lucky, not only do they have their own source of water at the farm where the distillery is located, they also grow their own barley to ensure that they are providing the freshest, highest quality products to their local community and the wider world. Our solution broke down into three key areas:
Malt milling
Ryebeck supplied and installed two new 31t malt silos with lorry discharge system, 4 roll Malt Mill, grist case and control system. The malt handling conveyor delivers high specification grist directly to the new mash vessel. This will be a good return on investment for Raer Scotch Whisky as bulk malt will give the added benefits of higher extract and enhanced control achieved from milling their own malt.
The Brewery
The brewery brought together some of the highest levels of automation installed in the UK. Fully remotely operated (even from your mobile if you wished), the 3 vessel brewery operation is completed with a 5000L Lauter Tun, 3 vessel automated brewhouse, Copper whirlpool, 6 x 5000L fermenting vessels, 2 x 2,500L blending vessels, complete hot and cold water preparation tanks (10,000L in total), refrigeration plant for cooling, and a full automated CIP set for ease of cleaning. In addition, this brewery comes with a ponndorf for automatic dispensing of spent grains from the lauter tun.
The Distillery
To enable a highly automated and near continuous operation of the still, Ryebeck proposed a dual 5000L and 2000L still setup. The 5,000L, still which distills the initial mash, has a pear shaped whisky helmet and the 2,000L still also has a pear shaped whisky helmet and a side mounted special distillation column. Both stills have a fully integrated CIP system of ease of cleaning and an automated distillation control system.
